This salad is ideal for hot days and the best thing is that it is super easy to make which makes it perfect for days when you are very busy and do not have time to prepare an elaborate dish. You can also add it other ingredients such as avocado. It is a oil-free recipe which makes it super healthy and light.
Ingredients (for 1 - 2 people):
- 2 mangoes
- Cilantro to taste
- 1/3 red onion
- 2 tomatoes
- Peanuts or cashews (optional)
- Tortilla toasts
Ingredients for the dressing:
- Juice of 1 lemon
- 1 tablespoon soy sauce
- Pepper powder to taste
- ¾ tablespoon brown sugar
- Chop the mango and tomato in medium size cubes, chop the onion into small cubes, chop the coriander finely and also chop the peanuts or cashews. Stir everything.
- For the dressing: mix the lemon juice with all the other ingredients and stir well.
- Finally serve the salad with toasts and add the dressing on top of each.
